Pulled Pork simmering sauce Stonewall Kitchen
A simmering sauce straight from North Carolina, for a total immersion experience!
Recipe:
Rub salt and pepper on a boneless pork shoulder. Heat 3 tablespoons of vegetable oil over medium-high heat in a heavy oven-safe pot with a lid. Brown the roast on all sides. Drain all but 2 tablespoons of fat. Pour the jar of simmering sauce over the pork. Cover the pot and cook in a preheated 325°F oven for 2 1/2 to 3 hours, until the pork can be easily separated with a fork. Baste the roast with the sauce several times during cooking. Remove the roast from the pot. Shred the pork, removing the fat. Return the pulled pork to the pan with the sauce and stir. Serve hot on a sandwich roll topped with coleslaw. Serves 6 to 8.
