Aioli: Recipes, Gourmet Variations, and History of an Essential Mediterranean Sauce

Aioli is much more than just a garlic sauce: it's a true icon of Mediterranean cuisine. Traditionally prepared with crushed garlic, olive oil, and sometimes egg yolk, aioli accompanies fish, vegetables, grilled meats, and even entire platters of seafood.

Today, aioli comes in many modern and creative versions, such as those offered by Stonewall Kitchen: aioli with Jolokia chili, smoked chipotle, fresh basil, roasted garlic, Buffalo style, habanero mango, fragrant rosemary, or even sriracha style. These gourmet sauces are made with quality salted eggs, for a creamy texture and incomparable taste.

And to vary the pleasures, you will also find in our selection:

Recipe: Deviled eggs with aioli

Ingredients (for 4 people)

- 6 fresh eggs

- 3 tablespoons of Stonewall Kitchen aioli – roasted garlic, basil, or sriracha according to your taste

- 1 teaspoon mild mustard (optional)

- 1 tablespoon lemon juice

- Salt, pepper

- A few sprigs of parsley or chives for decoration

- Sweet paprika or chili (for sprinkling)

Preparation

1. Cook the eggs: Place the eggs in a pot of boiling water for 9 to 10 minutes. Cool them immediately in ice water, then peel them.

2. Prepare the filling:

Cut the hard-boiled eggs in half lengthwise.

Carefully remove the yolks and mash them in a bowl using a fork.

3. Mix the filling:

Add the aioli to the egg yolks, a little mustard (if desired), and lemon juice.

Season with salt and pepper, and mix until you get a smooth and creamy consistency.

4. Fill the eggs:

Fill the hollowed egg whites with this mixture, using a small spoon or a piping bag for a more elegant presentation.

5. Finish and serve:

Sprinkle with chopped fresh herbs (parsley or chives).

Sprinkle lightly with sweet paprika or chili for the finishing touch.

Gourmet tip

Try with a basil aioli for a fresh and herbal version.

Or opt for a chipotle or Jolokia aioli if you like a spicy note.

Serve chilled as an appetizer, tapas, or summer starter.

Chef's tip: aioli pairs wonderfully with grilled fish, a plate of steamed vegetables, or even roasted prawns.

Modern and gourmet variations

In addition to the classic recipe, discover revisited aiolis that add zest to your dishes:

- Basil aioli: ideal with fresh tomatoes or a Caprese salad.

- Chipotle or Jolokia aioli: to spice up tacos, burgers, and grilled meats.

- Roasted garlic aioli: milder, perfect to accompany white meat and even whelks.

- Habanero mango aioli: surprising sweet-spicy combination with sautéed shrimp.

- Rosemary aioli: subtle pairing with oven-roasted potatoes and salted cod.

- Buffalo or sriracha aioli: a must-try on crispy wings.

The history and culture of aioli

Originating from Provence and Catalonia, aioli is an integral part of Mediterranean culinary heritage. A symbol of conviviality, it is often associated with the famous "grand aioli", a traditional dish where the sauce is served with a multitude of vegetables, fish, and sometimes snails.

What's the difference between aioli and mayonnaise?

Aioli is a sauce based on garlic and olive oil, sometimes enriched with an egg yolk. Mayonnaise, on the other hand, is an emulsion of oil and egg yolk, to which mustard is often added.

How to make an aioli that doesn't separate?

Add the oil in a very thin stream while whisking vigorously. If the sauce separates, incorporate a fresh egg yolk to rescue it.

What to serve with aioli?

Traditionally with fish, steamed vegetables, and seafood. But it's also delicious in burgers, sandwiches, fries (potatoes in general), wraps, and many other dishes.

Can homemade aioli be stored?

Yes, in the refrigerator in an airtight jar, but no more than 24 to 48 hours due to the raw egg.

Are there egg-free versions?

Absolutely! The most authentic Provençal version is prepared only with garlic and olive oil. To do this, crush the garlic cloves in a mortar or with a pestle and pour the oil in a thin stream while mixing with a whisk until you get a thick texture. After that, just add a pinch of salt.
