The story of Cajohn's sauces
Cajohn's Fiery Foods is a company created in 1996 by John Hard, a fire protection engineer passionate about heat and spicy food. This passion developed through his many trips to the Gulf of Mexico and the Southwest United States for fire protection projects. That's when he fell in love with the local cuisine. As for his wife, Sue, she was raised in Mississippi and the couple regularly visits her family in New Orleans. Everything was set for John to discover the ingredients needed for his future sauces.
John always prepared meals for family or friends, introducing them to real Cajun cuisine rather than what was served in American chain restaurants.
He then began sending letters to order the products he needed from vendors in Louisiana, Texas, and New Mexico. That's when he came up with the idea of opening a store in Columbus where he could find everything he would need. That was the beginning.
John opened his Cajohn's Fiery Foods store and participated in the Fiery Foods Show in Albuquerque, New Mexico to develop his product sales. He also created a product line based on his recipes, but the minimum production required was too large for him. He then met a product packager in New Mexico who shared his passion for spicy cuisine, and in 2002 John opened his first manufacturing facility to better control his production.
In mid-2004, John sold his fire protection business to fully dedicate himself to his passion.
For his first sauce, "Hot spots" was his daughter Erin's idea, the concept of the Dalmatian with a black spot.
His son Nathan, who loves chicken wings, inspired him to create Nate Dog's Killer Wing Sauce. The whole family was involved in this new business.

Today Cajohn's offers more than 150 products for sale: salsa, hot sauce, barbecue sauce, rubs, spice blends, mustards... and all types are represented: Cajun, Asian, Creole, Southwest United States.
And all sauces are made from natural ingredients, without preservatives, with peppers from the United States, prepared in small batches to ensure the best quality and taste. That's why Cajohn's has already won more than 200 international, national and regional awards!
