The huachinango pepper is the specific name given to a variety of red jalapeño pepper grown in central Mexico, in the region of Puebla and Oaxaca. It can be recognized by the veins on its skin. It's a slightly elongated pepper, 10 to 13 cm long and 4 cm in diameter. Its taste is rather mild with medium heat. They are highly sought after for their flavor and are also rarer, which makes them a much more expensive pepper than the jalapeño. When the huachinango is smoked, it's called grande chipotle pepper. It is consumed in sauce or salsa form.
