📍 Origin and History
Espelette pepper (Capsicum annuum var. Gorria) is a variety of pepper mainly cultivated in the French Basque Country, in and around the village of Espelette, at the foot of the Atlantic Pyrenees.
Introduced to Europe from the Americas in the 16th century, this pepper found an ideal terroir in the mild and humid climate of the Basque Country. Initially used as a medicinal plant and natural preservative, it gradually became an essential spice in Basque cuisine.
Since 2000, Espelette pepper has benefited from a Controlled Designation of Origin (AOC), and then a Protected Designation of Origin (PDO) since 2008, guaranteeing its quality, origin, and artisanal cultivation methods.

Espelette pepper is a mild to moderately spicy pepper, ranging between 1,000 and 4,000 units on the Scoville scale. It is therefore much less hot than bird's eye chili or jalapeño, but it stands out for its warm, fruity, slightly smoky aroma and its ability to enhance flavors without masking other ingredients.

Espelette pepper is the iconic condiment of the Basque Country. It traditionally replaces black pepper in many regional recipes. It is used:
- In axoa de veau (spiced veal stew)
- With Basque free-range chickens
- To flavor cured meats, like Basque chorizo or Bayonne ham
- In sauces, broths, cheeses or even some chocolate desserts
In powder form or as a string of dried peppers, Espelette pepper is a local pride. Each year, the town of Espelette organizes a pepper festival attracting thousands of visitors.

Espelette pepper can be used:
- As powder: sprinkled on meats, fish, eggs, vegetables, sauces
- As a puree or paste: incorporated into marinades or vinaigrettes
- Infused: in homemade oils or sauces
- As a string of dried peppers: typical decoration, but also useful in cooking after drying

🍳 Simple Recipe: Fried Eggs with Espelette Pepper
Ingredients (for 2 people):
- 4 free-range eggs
- 1 tablespoon of butter or olive oil
- 1 pinch of PDO Espelette Pepper (powdered)
- Fine salt (optional)
- Toasted country bread (as a side)
Preparation:
1. Gently heat the butter in a non-stick pan.
2. Carefully crack the eggs and cook them over medium heat until the whites are set.
3. Sprinkle a pinch of Espelette Pepper on the yolks (and salt if needed).
