Sumatra pepper seeds - La Sauce Piquante
New

Native to Asia, this pepper produces beautiful pods that gradually change from yellow to orange, then bright red when fully ripe. You can enjoy them at every stage of ripeness.

Shaped like small, elongated bell peppers, measuring 4 to 5 cm long, and featuring a smooth, glossy, deeply rippled surface, Sumatra peppers add a distinctive touch to both the vegetable garden and your cooking. This variety is ideal for gardeners who want to grow a pepper that is attractive, aromatic, and versatile in the kitchen.

A fruity pepper with intense aromas

The Sumatra pepper stands out for its fruity flavor and noticeable heat. Its heat level is estimated at 10,000 to 50,000 Scoville Heat Units (SHU), ranging from moderately hot to hot depending on your sensitivity.

Its expressive aromas make it an excellent ingredient for adding heat to recipes without masking other flavors. It fits easily into Asian cooking, spicy dishes, and homemade recipes.

How can you use Sumatra peppers in cooking?

With its fruity profile and pronounced heat, the Sumatra pepper offers plenty of culinary possibilities:

  • Homemade hot sauces: combine the ripe peppers with garlic, vinegar, and a pinch of salt to make a spicy, flavorful sauce.
  • Spicy chutneys: pair it with mango, pineapple, or exotic fruits to make a sweet, tangy, and spicy condiment.
  • Asian cooking: add it to curries, marinades, vegetable stir-fries, and noodle dishes.
  • Meat and fish: use it in a marinade to add a fruity note and lingering heat.
  • Preserved peppers: prepare the peppers using a suitable recipe to enjoy their flavor year-round.

To preserve its aromas, start with a small amount and adjust according to your desired heat level.

How do you grow Sumatra peppers?

The Sumatra pepper is a Capsicum chinense variety that thrives in warmth, full sun, and rich growing medium. Under good growing conditions, it forms a bushy plant that can reach approximately 70 to 90 cm in height.

Sowing Sumatra pepper seeds

  • Sowing period: January to April.
  • Ideal germination temperature: 26 to 28 °C.
  • Estimated germination time: 12 to 21 days.
  • Recommended method: sow the seeds in a fine, slightly moist seed-starting mix, then maintain a stable temperature with a mini greenhouse and, if needed, a heat mat.

Pepper seeds may germinate unevenly. Keep the growing medium moist but not soaked, and avoid excess water, which encourages the seeds to rot.

Planting and care

After germination, place the seedlings in a very bright spot. Transplant them once they are sufficiently developed, taking care not to damage their roots.

Then place your Sumatra pepper plant in a warm, sunny spot sheltered from the wind. It prefers moist, well-drained soil rich in organic matter. Provide at least 6 hours of direct sunlight a day to encourage growth and ripening.

Wait approximately 2 to 3 weeks after the last frost before moving your plants outdoors for good. Peppers are sensitive to cold, so protect them from low temperatures and sudden changes.

Growing in pots and overwintering

Sumatra peppers can also be grown in pots on a balcony, patio, or in a greenhouse. Choose a large enough container with drainage holes, and do not let water stand in the saucer.

In colder regions, you can keep the potted plant through winter. Bring it indoors before the first frost, water it a little less, and place it in a bright spot where the temperature stays at least 15 °C.
