Barbecue is a true institution, however today no one can agree on the origin of this cooking method. By definition, barbecue involves cooking a piece of meat slowly using a wood fire that will release smoke and flavor the meat.
The first thing to know is the difference between grilling and smoking (barbecuing), although it may seem to be the same thing, there is a huge difference between the two. When grilling meat, we cook at very high temperature and quickly, whereas for smoking meat, we take our time, the meat cooks slowly under the heat of the fire and will therefore be infused with the smoke produced by the fire.
There are different types of barbecue, many US states have developed their own style, in Texas they use beef, in Carolina it's pork, in Kansas City it's more about ribs, in Kentucky mutton is the specialty, etc...
- Beef brisket: Beef brisket is a recipe originating from Texas and one of the best cuts of beef. Preparing beef brisket requires a lot of time to ensure it's tender, you'll need to count on several hours of cooking.
- Owensboro mutton: This is a very old recipe dating back to the 19th century when mutton production became significant. It's a Kentucky recipe served on bread with a vinegar-based sauce.
- Pulled pork: This is a recipe where pork is cooked very slowly on the barbecue until the pieces fall apart on their own. It's absolutely delicious, and there are many recipes depending on the country.
