To succeed at barbecuing there are certain rules to follow, of course it's not because you have the best equipment that you'll be a barbecue ace, nevertheless I think there are some interesting accessories to own to succeed at a good barbecue. These are just suggestions, the most important thing being for you to have equipment you're comfortable with.
A long stainless steel tong
It is essential to have a good barbecue tong, in order to be able to turn over easily and quickly the food that is on your barbecue. A good tong has a grip that is sufficiently flexible not to damage the food and especially not to cut into the food. Similarly a good BBQ tong has a safety feature where you hold it, so as not to burn yourself. It also requires good length, don't buy a tong that's too short otherwise your hand would be too close to the coals and you risk serious burns. Similarly choose one that's strong enough to support a little more than the weight of a sausage... There are many models on the market don't just think about the design of your tong but also its usefulness, it's not incompatible...
Barbecue fork
I often tell you not to use a fork, however in some cases it can prove very useful especially when you have large pieces of meat, it will be easier to turn them over with a barbecue fork. I use it mainly for pork ribs for example. The main thing is to choose a stainless steel barbecue fork, with a handle in another material that will protect you from the heat. Avoid wood for the handle as it will be altered very quickly by the barbecue heat. There are many models on the market, check that the fork is strong enough to turn over pieces of meat weighing more than 1kg.
The barbecue spatula
Today we find spatulas with lots of built-in gadgets: the bottle opener, an integrated fork, etc... No need to tell you that all this is useless, what we expect from a good spatula is its resistance and especially that we can easily detach food from the burning grill of the barbecue. Because if you have food that sticks like fish for example and you have a bad spatula, it's very likely that the fish will fall apart. So be careful when choosing your spatula by respecting the same basic rules as for choosing a fork or barbecue tong.
The barbecue brush
Not everyone has use for it yet for me it's an essential, maybe even more than tongs. The barbecue brush is used to baste the food that is cooking on the barbecue. You will therefore need a brush that is heat resistant and that cleans simply and quickly without half the sauce remaining afterwards. This is why I advise you to choose a brush with a silicone tip and not bristles, also avoid wooden brushes which will blacken from their first use. Silicone has the particularity of cleaning very well and resists heat. The handle must also be long enough not to burn you.
The brush for cleaning a barbecue
If you take care of your barbecue, the cleaning brush is an essential element for cleaning both the grill and the tray. However most brushes don't last more than a year, which is why I advise you to choose a resistant stainless steel one with metal bristles to properly remove burnt grease from your grill and charcoal marks. The metal brushes that professionals use on construction sites are perfect too, they are very resistant and the wooden handle lasts a long time.
The meat thermometer
The one I would call essential, if you don't have one yet go get one right away. The secret to successful cooking is the temperature of the meat. There is a huge difference between meat at 60°C and one at 63°C, which is why you cannot do without a meat thermometer if you want to become a barbecue pro and especially if you want to cook large pieces of meat. You can find them almost everywhere now and they are rather fragile so be careful when handling them.
