Chicken drumstick lollipop-style barbecue

Ingredients

- 8 chicken drumsticks

- 2 to 3 tbsp of Lemon Pepper Rub from Lynchburg

- 2 to 3 tbsp of Hellicious spicy mango sauce

- 1 tbsp olive oil



🔪 Preparing the lollipops

1. With a knife, cut around the bone at the bottom of the drumstick.

2. Push the meat upward to form a "ball" (lollipop style).

3. Remove the small pieces/cartilage for a clean finish.

It's the most technical step, but it makes all the visual difference.



Seasoning

1. Lightly brush the drumsticks with olive oil.

2. Generously sprinkle the Lemon Pepper Rub all over the meat.

3. Let rest for 30 min (or ideally 2h in the fridge).



🔥 Cooking (your choice)

Barbecue (best taste):

- Indirect cooking at ~180°C for 35–40 min

- Turn from time to time

Oven:

- 190°C fan-assisted heat

- 40–45 min on a rack (with a tray underneath)



🥭 Spicy mango glaze

1. At 10 minutes before the end, brush with the spicy mango sauce

2. Put back on the heat to caramelize slightly

3. Add a second layer just before serving



Result

- Crispy skin

- Lemony acidity + pepper

- Sweet/spicy mango that sticks well to the chicken



Bonus tip

Add a little fresh lemon juice or zest after cooking to further boost the fresh flavor.
