The poblano pepper is one of the most popular peppers in Mexico. Dark green in color, it measures 9 to 15 cm long and almost 4 cm in diameter. Its level of heat varies between medium and strong. The poblano is always used cooked or grilled and never eaten fresh. Once grilled, the pepper develops smoky and earthy notes. When the pepper is very hot, the seeds are removed. Poblano is used in many spicy recipes.
