The macho pepper resembles the pequin pepper. Its color is light green (red when fully ripe) and it measures only 2 or 3 cm long and a few mm in diameter. It is a small pepper in size but its taste is extreme. It is very hot and develops intense herbaceous aromas. Consumed in salsas, but also in stews, however it is removed from the dish before serving, it is only macerated for a longer or shorter time depending on the desired level of heat.
