What is chipotle in adobo?
The traditional red Jalapeno pepper has been smoked to make chipotle pepper (thanks to the Aztecs for this ancestral smoking process).
These whole Chipotles are surrounded by a delicious tomato broth that gives a subtle and intoxicating heat to the preparation.
The recipe includes chipotle peppers, tomato paste, vinegar, onions, garlic and corn oil to soften the concoction. Everything has been infused for hours over medium heat.
How to use it?
Chipotle pepper is most commonly used in the United States, where people are particularly fond of its smoky taste that can be found on both meats and in sauce for vegetables.
