Pikliz N Scorpion: the Hot Ones hot sauce with a Caribbean character

Featured in season 30 of the Hot Ones USA show, this sauce stands out for its balance between freshness, acidity and pepper heat.

With 54,000 units on the Scoville scale, the Pikliz N Scorpion offers a heat that is already well pronounced, while maintaining a particularly interesting aromatic profile. The Trinidad Scorpion pepper and habanero bring the heat, while the cabbage, yellow bell pepper, onion, thyme and bitter orange juice build a lively, vegetal and tangy sauce.

Tasting notes

From the very first drop, the Pikliz N Scorpion surprises with its tangy and fresh character. The bitter orange juice and vinegar deliver a lively attack that immediately awakens the palate.

The cabbage and yellow bell pepper then add a lovely vegetal dimension, complemented by the onion and a subtle note of thyme. The sauce thus retains a great deal of freshness despite the presence of particularly powerful peppers.

On the palate, the Trinidad Scorpion and habanero appear progressively. The heat builds steadily and persistently, without completely masking the flavors. This is precisely what makes this sauce particularly interesting: it does not just aim to burn — it also brings acidity and character to dishes.

Aromatic profile

  • Spicy: Trinidad Scorpion & habanero

  • Vegetal: cabbage & yellow bell pepper

  • Tangy: bitter orange & vinegar

  • Aromatic: thyme

  • Sweet: a light touch of sugar

  • Heat: progressive and persistent

How to use the Pikliz N Scorpion hot sauce?

The great strength of this sauce is its versatility. Its tangy and vegetal profile works particularly well with rich or fried dishes, to which it brings freshness and contrast.

Hot dogs, sausages and burgers: Replace ketchup or traditional relish with a few dashes of Pikliz N Scorpion. Its acidity perfectly cuts through the fattiness of sausages, hot dogs and burgers.

Fried chicken and grilled chicken: Pour it over fried chicken, wings or grilled chicken. The vinegary and tangy side pairs particularly well with crispy preparations.

Grilled meats: It is also excellent with roasted pork, pulled pork, grilled meats or a traditional Haitian griot. Its freshness lifts rich meats without weighing them down.

Tacos and street-food cooking: A few drops in chicken, pork or shrimp tacos are enough to bring a genuine Caribbean touch.

Rice and vegetarian dishes: Add it to a bowl of rice, red beans, grilled vegetables or a vegetarian bowl to instantly bring acidity and spice.

Sandwiches and wraps: Pikliz N Scorpion also works very well in sandwiches, wraps, grilled cheese or homemade burgers.

Tip: start with a small amount, then gradually increase. With 54,000 SHU, just a few drops can already transform a dish!

A sauce inspired by the traditional Haitian pikliz

Pikliz is an iconic condiment from Haitian cuisine, traditionally prepared with cabbage, vegetables, vinegar and peppers. It is particularly appreciated for its tangy character and its ability to accompany rich dishes and meats.

Hot N Saucy takes this Caribbean inspiration and combines it with Trinidad Scorpion and habanero peppers to create a modern, lively and particularly aromatic hot sauce. The presence of cabbage, onion, yellow bell pepper, thyme and bitter orange juice preserves the spirit of pikliz while offering a sauce that is easy to use on a daily basis.
