Recipe: Creamy Madras Curry with Chicken, Coconut Milk and Chickpeas

Ingredients (serves 4)

  • 500 g chicken breast cut into pieces

  • 2 tablespoons of Patak's Madras curry paste

  • 400 ml coconut milk

  • 250 g cooked chickpeas

  • 1 onion

  • 2 garlic cloves

  • 1 tablespoon vegetable oil

  • Fresh coriander

  • Basmati rice as a side dish

Preparation

  1. Sauté the sliced onion and garlic in oil until translucent.

  2. Add the Patak's Madras Curry Paste and cook for one minute to develop the aromas.

  3. Add the chicken pieces and brown them.

  4. Pour in the coconut milk then add the chickpeas.
