Cooking with fresh chili

 

Here are some recipe ideas for using your fresh chili peppers:

Would you dare try Habanero pepper jam for breakfast?

 

The recipe:

 

Ingredients:

(for approximately 3.5 kg of jam)

 

  • 2 grapefruits
  • 3 limes
  • 1.8 L of water
  • 100 g of Habanero peppers (without seeds)
  • 2.5 g of powdered sugar
  • 100 ml of freshly squeezed lemon

 

Peel the grapefruits and cut the skin into large quarters. Do the same with the lemons. If they are too difficult to peel, cut the whole lemon as finely as possible (remove the seeds). Set the seeds aside. Squeeze the juice into a bowl and roughly cut the pulp. Put the lemon, grapefruit pulp, juice, and skin in a pan with water. Put the seeds in a small cheesecloth and tie with string. Add the bag to the pan.

Bring to a boil, reduce heat and let simmer gently, uncovered for 1h30-45. Remove the bag and squeeze the juice into the pan.

In a small bowl, add 150 ml of the liquid you just made then add the chilies. Blend to obtain a puree. Empty the bowl into the pan and mix. Add sugar and lemon juice. Boil for 15 to 20 minutes. To know if the jam is ready, take a small amount and let it cool on a plate. If a skin forms, it's ready! If not, continue cooking and test again after 10 minutes. Fill the jars once finished.

 

Make your own homemade hot sauce!

 

For 1 kg of sauce, use at least 200 g of chili (of your choice, Habanero, Jolokia, Jalapeno, Poblano...) to which you can add all the spices you like: garlic, onion, lemon juice, coriander, herbs, salt, sugar, cumin... let your imagination run wild! And you can also mix several types of chilies.
