Hot Bergine Sauce - Good Heat - La Sauce Piquante
New

Good Heat Hot Bergine is an original hot sauce featured in season 30 of Hot Ones USA, where it holds the 2nd position in the show's famous hot sauce ranking.

With 7,900 units on the Scoville scale (SHU), Hot Bergine delivers a well-present heat but remains particularly interesting for its flavors. Its rich texture and very umami profile make it an ideal eggplant hot sauce to pair with pizzas, pasta, meats, grilled vegetables, sandwiches and cheeses.

Tasting notes

Good Heat Hot Bergine immediately stands out from classic hot sauces. Here, it's not just about bringing heat: roasted eggplant is truly the heart of the recipe.

On the palate, the roasted eggplant brings a generous texture and soft, almost melting notes, quickly joined by the depth of roasted tomatoes. The garlic and red onion reinforce the savory character of the sauce, while the olive oil adds a particularly pleasant roundness.

White vinegar and red wine vinegar awaken the whole with a touch of acidity, before letting the basil and the vegetal notes of the habanero pepper come through. The heat is frank but relatively clean, with a spicy sensation that accompanies the flavors without overwhelming them.

The result is a rich, Mediterranean, plant-based and very umami hot sauce, with a beautiful combination of roasted eggplant, tomato, garlic, basil and habanero. A true cooking sauce, just as interesting as a finishing touch as it is as a side condiment.

How hot is Good Heat Hot Bergine hot sauce?

Good Heat Hot Bergine registers 7,900 SHU (Scoville Heat Units). It therefore sits in a moderate heat range, with a clearly perceptible but accessible warmth for many hot sauce enthusiasts. It is rated around 3/10 in heat level by distributors of the Hot Ones range.

Its appeal lies mainly in its balance: the habanero pepper brings the heat, while the roasted eggplant, tomato, olive oil and aromatics add a great deal of roundness.

At 7,900 Scoville units, Hot Bergine is spicier than a classic mild hot sauce, without entering the category of extremely hot sauces. It's an excellent option for enthusiasts who are looking for flavor and heat, rather than a simple race to the top in terms of intensity.

How to use Hot Bergine sauce?

Good Heat Hot Bergine hot sauce is particularly versatile thanks to its Mediterranean profile. Its richness and roasted vegetable notes allow it to be used both as a side sauce and as a condiment or finishing touch.

It's perfect:

  • on a pizza, especially a Margherita or a grilled vegetable pizza;

  • in a pasta dish with parmesan and basil;

  • on gnocchi or lasagna;

  • with grilled chicken or crispy chicken;

  • in a sandwich or a panini;

  • with roasted vegetables such as zucchini, eggplant or potatoes;

  • on scrambled eggs, an omelette or a shakshuka;

  • with goat cheese or a burrata;

  • on a charcuterie and cheese board;

  • as a dipping sauce for toasted bread;

  • in a marinade for grilled meats and vegetables.

For simple use, pour a few drops directly onto your dish when serving. For a creamier sauce, mix Hot Bergine with cream cheese, Greek yogurt or mayonnaise.

Recipe: Burrata pizza, Hot Bergine & basil

The burrata pizza is an excellent base for bringing out the Mediterranean flavors of Good Heat Hot Bergine. The roasted eggplant and tomato naturally extend the aromas of the pizza, while the burrata adds a creamy texture that perfectly balances the heat of the habanero.

Ingredients for 2 people

  • 1 pizza dough

  • 150 g of tomato sauce

  • 1 burrata ball

  • 1 small eggplant

  • 8 to 10 cherry tomatoes

  • 1 to 2 tablespoons of Good Heat Hot Bergine

  • A few fresh basil leaves

  • 1 drizzle of olive oil

  • Grated parmesan

  • Salt and pepper

Preparation

  1. Preheat your oven to its maximum temperature, ideally with a baking sheet or a pizza stone.

  2. Cut the eggplant into small cubes and the cherry tomatoes in half.

  3. Roast them for a few minutes with a drizzle of olive oil, salt and pepper.

  4. Roll out the pizza dough and spread the tomato sauce.

  5. Add the roasted eggplant and tomatoes along with a little parmesan.

  6. Bake the pizza until the edges are golden and crispy.

  7. Out of the oven, add the burrata in the center.

  8. Generously drizzle a few streaks of Good Heat Hot Bergine over the pizza.

  9. Finish with fresh basil and a drizzle of olive oil.

Tip: add Hot Bergine after cooking rather than cooking it. This way you'll preserve all the freshness of its basil, vinegar and habanero notes.

Good Heat: a Canadian brand of original hot sauces

Good Heat is a brand founded in Montreal by Maxime Chenier-Groulx, a passionate food and chili lover. The adventure began in 2019, when Maxime started creating new hot sauces every Sunday in his kitchen, experimenting with different flavor combinations and culinary pairings.

Its philosophy is to challenge the traditional idea of what a hot sauce can be. Good Heat thus seeks to create bold, original and reasonably spicy sauces, in which flavor always retains a central place.

The brand became notably well-known through its appearance on Hot Ones season 23 with Queso SIN Queso, before returning in season 30 with Hot Bergine. The latter confirms Good Heat's very gastronomic approach with a plant-based recipe built around roasted eggplant and tomato.
