Caramelized Chinese chicken wok with Hoisin sauce

Ingredients

  • 400 g of chicken breast (or boneless chicken thighs)

  • 2 tablespoons of Lee Kum Kee Hoisin sauce

  • 1 tablespoon of Pearl River Bridge Superior Light soy sauce

  • 1 tablespoon of Lee Kum Kee Spare Rib sauce

  • 1 teaspoon of Pearl River Bridge mild vinegar

  • 1 tablespoon of Wangzhihe sesame paste

  • 1 garlic clove

  • 1 small piece of fresh ginger

  • 1 tablespoon of vegetable oil

  • 1 carrot

  • 1/2 bell pepper

  • 1 small onion

  • 100 ml of water

  • Sesame seeds and scallions for serving

  • Pepper to taste

Preparation

1. Prepare the sauce; In a bowl, mix the Hoisin sauce, soy sauce, Spare Rib sauce, mild vinegar and sesame paste. Add approximately 100 ml of water and stir until you obtain a smooth and slightly creamy sauce.

2. Prepare the chicken; Cut the chicken breasts into thin strips. Mince the garlic and ginger. Cut the carrot, bell pepper and onion into thin strips.

3. Sear the chicken; Heat the oil in a wok or large skillet over high heat. Add the chicken and brown it for 4 to 5 minutes. Then add the garlic and ginger and continue cooking for 1 minute.

4. Add the vegetables; Add the onion, carrot and bell pepper. Stir-fry everything for 3 to 4 minutes. The vegetables should remain slightly crunchy.

5. Caramelize; Pour the prepared sauce into the wok. Stir well and let reduce for 2 to 3 minutes. The sauce will thicken and generously coat the chicken and vegetables.

6. Serve immediately with white rice or Chinese noodles. Sprinkle with sesame seeds and fresh scallions.

The tip

For an even more indulgent version, let the sauce caramelize slightly at the bottom of the wok before giving it one final stir. You will get a glossy chicken, generously coated in a sweet, salty and fragrant sauce.
