Matouk Calypso Sauce
Calypso is a Caribbean music (from Trinidad and Tobago) in 2/4 time, originating from the island's slaves who worked in sugar cane plantations and were not allowed to speak. They sang Calypso to communicate with each other in front of their master. Matouk's sauce is a perfect balance between sweetness, heat and acidity. It goes well with all types of dishes but is preferred with poultry and rice.
