The jolokia pepper originates from the Nagaland region in India. With 1,000,000 on the Scoville scale, it was once the hottest pepper in the world. Even though it now ranks 5th, it remains formidable. We love it for its cocoa, pepper, and roasted flavors. It will add great depth to your slow-cooked dishes, but be careful not to use too much!!!
Cooking tip: rehydrate the pepper in lukewarm water for 30 minutes.
