Otafuku Tonkatsu Sauce
What is Tonkatsu?
Ah, the famous Tonkatsu, a legendary Japanese dish, consisting of crispy breaded pork that you can either devour with curry sauce and rice, or in a sandwich (Sando) with this delicious sauce.
Tonkatsu Sando Recipe
Ingredients:
- soft sandwich bread
- pork loin
- panko breadcrumbs
- Chinese cabbage
- Tonkatsu sauce
- mayonnaise or butter
- oil for frying
- flour
- egg (one egg per slice of pork)
- salt & pepper
- mustard (optional) to add on top of the butter
Preparation:
Pierce your pork slice and tenderize it by pounding. Then season with salt and pepper and coat the slice in flour, then in beaten egg, then in breadcrumbs, again in egg, and again in breadcrumbs to ensure the breading is thick and crispy.
Then, deep fry your pork slice in hot oil until it turns a beautiful golden color (about 8 minutes on average for a thick slice).
Meanwhile, slice your Chinese cabbage thinly, butter your sandwich bread (or spread a little mayonnaise), place your cooked meat on it, then add the Tonkatsu sauce, the cabbage, and more sauce, close with the second slice of bread, and finally cut your sandwich in half. You can eat it hot or cold depending on your preference.
