What is a marinade?
It's a sauce full of flavor, spices, aromatic herbs and of course a liquid base like vinegar, soy sauce, oil, lemon juice. Everything must be well seasoned so that your meat can be pleasantly flavored.
There are several benefits to marinating meat; tenderizing it, preventing drying during cooking, giving it a balanced taste through seasoning, and finally caramelizing it if you use a suitable marinade.
Why can marinating change everything?

There is also a very wide choice of marinade sauces that are intended only for sale to professionals (restaurants, butcher shops). How to make meat tender?
Vinegar releases meat collagen more effectively than bases like oil. The longer the meat marinates, the more tender and juicy it will be. The different types of marinades
There are 4 distinct types of marinades that are used depending on what you want to cook over flame or otherwise:
- Oil-based marinade: widely used in France, this allows to preserve the sapidity (taste) of foods whether for your meats or vegetables. The taste of the marinade will change depending on the oil used (olive oil, sunflower, sesame...). We recommend this type of sauce for long cooking times at temperatures not exceeding 190°.
- Acid marinade: this technique is probably the favorite of professional barbecues in America because the vinegar or lemon base particularly tenderizes your grilled foods.
- Dry marinade: also called "rubs" in the USA, it's a mixture of spices, salt and sugar. Simply rub your food and place it in the refrigerator for at least 30 minutes so that these can infuse your dishes while flavoring them.
- Caramelizing marinade: This sauce contains honey or brown sugar to caramelize your food. It is therefore important to use thin cuts of meat so that they don't blacken during cooking. Fast cooking is needed for all foods that you will combine with a syrupy sauce.

Tips for flavorful marinades
Whether you choose chicken, red meat, fish or vegetables, the important thing will always be the time your meat spends marinating in the refrigerator. We recommend a minimum of 3 hours of rest so that the marinade properly infuses your food. Of course, the longer you leave it in the fridge, the better it will be (do not exceed the expiration date).
You can also choose to extend your marinade with oil or vinegar if you have a large piece to cook.
Vegetarians can also use marinade sauces
Indeed, there is a real interest for vegetarians or vegans to marinate their tofu (or tempeh, mushrooms and vegetables) as it can take on a whole new taste dimension thanks to a chipotle marinade for example. The tofu will be pleasantly spiced with a most agreeable smoky chili taste.
Mushrooms, carrots, cabbages also marinate very well. You can vary the pleasures by using different marinades such as yuzu and teriyaki for your mushrooms, another for your Hawaiian-influenced meal cravings, and a chipotle and maple syrup marinade for your tofu.
